This camp runs June 28 - July 2, August 2 - 6 (just added!), and August 23 - 27.
You asked for it: an intensive, personalized program for teens that welcomes them into the world of the restaurant kitchen to give them the skills and know-how to cook like a chef at home. We’ll meet for three hours with a short break each day: see below for details about each day’s lessons and recipes.
Students will receive a robust lesson packet with a shopping list and recipes, plus a guide to setting up their kitchen.
Lucky for us, we’re teaching this course in the summer when we’ll have the very best produce to work with. Everything we make will be vegetarian, and adaptable for gluten, dairy and nut-free diets.

Monday: Knives Out!
Today we’ll learn about the tools and ingredients that are essential, how to read a recipe, and talk mise en place and kitchen safety. Then we’ll hone our knife skills and make a meal with everything we sliced and diced.
Recipes: Vegetable Scrap Stock & Risotto with Caramelized Onions, Corn and Herbs
Tuesday: Fire & Flavor
Today we’ll learn how cooks manipulate heat to achieve different results and practice sautéing, roasting, and searing. We will also focus on sauces as we create a gorgeous vegetable platter.
Recipes: Roasted and Seared Vegetable Platters with three sauces: Aioli, Romesco and Salsa Verde & Perfect Boiled Eggs
Wednesday: Taking Stock of the Season
Today we’ll focus on celebrating and preserving the season’s harvest. We’ll make seasonal vegetable galettes with homemade pastry and lacto-fermented pickles, then we’ll set up our overnight bread.

Thursday: Rise Up
Today we’re talking yeast and leaveners, doughs and gluten. As our overnight bread bakes, we’ll prepare our cake layers.

Friday: Eat the Rainbow
Today we’ll do a deep dive into frosting and cake decorating skills as we put together our four layer rainbow cake. We’ll wrap up our week with our famous seasonal pasta challenge where each cook creates their own signature dish.

About The Dynamite Shop (kids cooking classes)
We started as a culinary social club for children and their families in a Park Slope, Brooklyn storefront with a teaching kitchen, cook's library, photo and video studio, backyard garden and a cafe up front. That was in 2017. In 2020 everything changed and we pivoted online.
Our goal is to help the rising generation of cooks find their niche in food, to celebrate the diversity of our communities and the wider world, and to develop positive relationships around food. Consider us Home Ec 2.0: we champion an old fashioned reverence of the table and offer a cool, supportive place to unplug, but we also embrace technology in the ways it can foster creativity and connection.
The Dynamite Shop empowers kids to express themselves through the lens of food, so we’re not just cooking lasagna and bibimbap to bring home for dinner--we’re learning about regional variations, live-streaming with chefs, watching and creating videos, and exploring how food intersects with culture and community.
Our core curricula is the Dynamite Dinner Club where kids gather in our Zoom kitchen to cook dinner for their families and learn real life cooking skills in the process. Beyond Dinner Club, we're a community that revolves around food: We offer cooking classes for the whole family, weekend workshops, food service projects, private parties and group cooking activities for all ages. Now that we’re online, we are available to the whole planet.
