Time

3:30pm - 5:00pm EST

Capacity

21 students

Class Experience

This is one of our most popular workshops; act fast because this one always sells out. Learn essential baking skills while making our Buttermilk Cupcakes and Buttercream Frosting from scratch. We’ll guide you through how to customize our recipes to make them your own and you’ll get to practice decorating techniques. This workshop is all about discovering your own signature cupcake so collect a few extra ingredients to customize your confection (see below).  Having these recipes in your back pocket will give you an essential life tool: being able to make a dessert everyone loves at the drop of a hat.

*

You’ll receive the lesson plan via email the Monday before the class and an email reminder with the Zoom link 30 minutes before class.

Ingredients you’ll need:

• 1 cup (2 sticks) unsalted butter

• 1 cup buttermilk (or 1 cup whole milk with 1 tablespoon replaced with lemon juice or white vinegar)

• 3 tablespoons heavy cream

• 2 large eggs

• 2 cups all-purpose flour (or a gluten-free substitute, we like Bob’s Red Mill 1:1)

• 1 1/2 cups confectioners' sugar

• 1 cup granulated sugar

• 3/4 teaspoon baking soda

• 3/4 teaspoon salt

• 2 teaspoons pure vanilla extract

• Optional additions for customizing your cupcakes: Food coloring, unsweetened cocoa powder (for chocolate cupcakes or buttercream), chocolate chips, butterscotch chips, coconut flakes, nuts, sprinkles, ground spices, citrus zest, flavored extracts like almond, mint and fruit.

*

Special equipment you’ll need:

• 12-cup muffin/cupcake pan

• Paper or foil baking cups

*

With the proper pre-class prep, our lessons are designed for children to be able to cook without parental participation, but parents know their children best. Some children may need a hand with particular equipment or instructions.

*

HOW TO SIGN UP MORE THAN ONE PERSON: Families using one screen for multiple people need only to purchase one seat for the family. Sample Class Format

The class starts with a 10 minute introduction of the dish, ingredients, and cultural context, followed by an overview of the class timeline. Then we cook! We do visual check-ins with each student and re-iterate that everyone cooks at their own pace, so there’s no rush. (If there are more than eight students in the class, a second teacher will help moderate the chat and tend to students’ questions.) Students are encouraged to ask questions and show their work for feedback. We also encourage students to clean as they go and we take several breaks to tidy up. After we are done cooking, we give serving and storing instructions.

Response from The Dynamite Shop (Cooking Classes)

We always welcome feedback about the pacing of our lessons, thank you! You can feel free to let us know in class if things are going too quickly so our teachers and moderators can slow down. It happens often in class that a student needs to rework something and our moderator can chat then through it privately with direct message. We encourage that everyone feel free to cook at their own pace.

Response from The Dynamite Shop (Cooking Classes)

Thank you for your feedback and great idea! We're now planning an advanced cake/cupcake decorating class for March (since with this class, we need for the cupcakes to cool before frosting.)

Loved:

We loved everything! Kate our instructor was fantastic, very friendly and knowledgeable. She facilitated the class very well, pace was good, lots of opportunity to ask questions. Her engagement with us was perfect ! The class was the right amount of time, and the recipe we did was really really tasty. We loved it!! I would sign up right now for the rest of the year however we are busy all weekend now (ski season). A baking class in the eve during the week would be a nice option.:)

Improvements:

Nothing!

About The Dynamite Shop (Cooking Classes)

We started as a culinary social club for children and their families in a Park Slope, Brooklyn storefront with a teaching kitchen, cook's library, photo and video studio, backyard garden and a cafe up front. That was in 2017. In 2020 everything changed and we pivoted online.

Our goal is to help the rising generation of cooks find their niche in food, to celebrate the diversity of our communities and the wider world, and to develop positive relationships around food. Consider us Home Ec 2.0: we champion an old fashioned reverence of the table and offer a cool, supportive place to unplug, but we also embrace technology in the ways it can foster creativity and connection.

The Dynamite Shop empowers kids to express themselves through the lens of food, so we’re not just cooking lasagna and bibimbap to bring home for dinner--we’re learning about regional variations, live-streaming with chefs, watching and creating videos, and exploring how food intersects with culture and community.

Our core curricula is the Dynamite Dinner Club where kids gather in our Zoom kitchen to cook dinner for their families and learn real life cooking skills in the process. Beyond Dinner Club, we're a community that revolves around food: We offer cooking classes for the whole family, weekend workshops, food service projects, private parties and group cooking activities for all ages. Now that we’re online, we are available to the whole planet.
