Intro Week: Mise En Place | Mise En Place is a French culinary phrase which means "putting in place.” It refers to the act of gathering and preparing all your ingredients before you start cooking so you’ll be organized during the cooking process. In our first week, we’ll teach the students how to get their home kitchen “into place” with an introduction into proper knife skills, how to taste, and how to shop for spices and ingredients from the market!
All about Eggs | Eggs are often the star of the most important meal of the day, and, to hear billions of cooks and chefs tell it, quite possibly the world's most important food.
Students will come away from this week learning all the ways to master the egg from curing an egg to mastering the omelette!
Chicken 101 | Cooking with meat can often be intimidating for students but during this week they’ll learn how to safely handle meat, how to make sure it’s properly prepared, as well as, how to cook classic chicken dishes every chef should know.
Pickling & Preserving | Students will learn how to pickle & preserve the summer’s freshest fruits and vegetables, opening their eyes to the possibilities of their pantry the whole year round!
From Market to Table | Students will expand their horizons beyond the studio walls and head out to explore our local Greenmarket at Union Square. They’ll learn how to shop for food, how to eat seasonally, and will get a chance at the end of the week to create their own unique dish with some of what the season yields. They’ll leave this week learning how cook with creativity and spontaneity with the beautiful produce of summer!
Quick Breads & Sourdough 101 | Students will learn all about the magic of yeast by making some of our favorite quick breads, from biscuits to scones, plus they’ll learn how to make their own starter so they can make sourdough at home!
Pies & Galettes | Students will become a pie & tart ninja in this week long class! They’ll learn the keys to a delicious, flaky crust, how to roll and shape the dough, how to incorporate savory and sweet fillings, and how to make fancy pie lattices.
Layer Cakes | We’re bringing back the layer cakes! Students will learn the fundamentals of mixing cake batter, stacking layers, and the lost art of real buttercream
The Great Freshmade Bake Off | Students will use the baking skills they learned in the last three weeks to plan and create a baking masterpiece of their choice to show off to the judges!

Our mission is not only to expose healthy foods to young children, but to also give parents and caregivers ideas of how they can create a love for healthy eating in their children. Our program is designed to make families more aware of healthy lifestyles through creative, hands-on classes for children, their parents and caregivers. Because we recognize that it is important to nurture the body, as well as the mind, the curriculum for our classes takes into account the developmental milestones and levels of all of our students. Through group activities and family-style classes we encourage socialization, independent thinking, and physical fitness. In addition, classes include components of literacy, science, and math according to age appropriate practices. As we strive to be a successful family center to the neighborhood, we hope to help grow healthy bodies and healthy minds.
