In this sweet and savory class, students will unlock the secrets to a perfect, flaky all-butter pastry crust as they learn to make a classic dough that can be used for everything from pies, tarts and galettes to homemade crackers, pot pies and quiches. Students will customize sweet fruit and savory vegetable fillings, discussing spices, herbs, seasoning, and flavor combinations before baking their unique creations to share with the whole club.

In order for this special class to happen, we require at least 8 students to sign up. In the case that we have to cancel and reschedule the class, we will email registrants with an offer to reschedule and/or issue a refund.
• ***Cooking is serious business and we work with high heat and sharp knives. We have a zero-tolerance policy for behavior issues and will call for pick up of any child who is disrupting our ability to maintain a safe space for the program participants • ***Cancellation policy: We get it: things come up, plans change. You can always cancel and have your fees applied to future sessions. Since tuition fees go toward food that needs to be ordered and chef instructors that need to be booked in advance, we have a 30-day cancellation policy for full refunds. If a refund isn’t requested in that 30-day window, we can offer a credit toward future programs. • ***It is IMPERATIVE that you let us know about any dietary restrictions and allergies if you did not on your initial registration form. This includes vegetarians, gluten-free, etc. • 1. What should we bring? • A water bottle is helpful. Please leave electronics, games, etc at home. • If your child requires any medication or device like an epi-pen or inhaler, please also reach out before the start of the program. • 2. What should we wear? • This is very important! These rules are all for safety’s sake. • 1) No open toed shoes. • 2) No crop tops or loose long sleeves. • 4) No bracelets, dangling necklaces or rings. • 5) A hat or hair tie for pulling hair back. We have Dynamite Shop trucker hats for sale in the shop if you forget. • 3. What are the other rules? • We will go over the rules at the beginning of the first day. We are a working commercial kitchen and everyone needs to stay safe. Please be clear with your child that sticking to our rules is essential for everyone’s safety and we will have to ask a student's guardian to pick them up if they do not comply. They are laminated and posted by each work station. • Another VERY important rule is we do not allow mobile phones at The Dynamite Shop. We are working with knives, liquids, heat; it’s no place for a phone. • 4. No phones?! But how will I reach my child if I have an issue about pick-up etc or they want to call me? • Remember landlines? Call us anytime, and we allow children to call their parents if needed. (917) 909-0288 • 5. Is your cafe open during camp? • We close at 3:30pm. Students are welcome to purchase drinks and pastries before then. • Cheers!
